The Peaks Menu. Est. Wolfeboro, NH.

A passport
of flavor.

Family recipes pulled from Filipino, French, Italian, Hawaiian and Spanish roots. Street food sharpened in the loudest corners of Korea, Thailand, India, the Middle East and Mexico. Shave ice inspired by the world's highest summits. All of it, one truck.

Good To Know

Our menu rotates by season and craving. Not everything below lives on the truck every day, and we love surprising our regulars with something new. For events and catering, we build a custom menu around your day.

01 /
Chapter One

Signature Eats.

The dishes we built the truck around. International street food made from scratch, cooked to order, loaded with the real stuff. Korean gochujang, house falafel, lemongrass we actually smell on the cutting board.

Korean Chicken, Bowl or Bao

Korea🇰🇷

Hand battered fried chicken glazed in sweet and spicy gochujang. As a bowl: mixed greens, veggie slaw, Korean cucumber salad, sweet potato noodles, gochujang aioli, scallion and black sesame. As bao: our homemade steamed buns with pickled red onion, cucumber and the same gorgeous sauce.

Signature Spicy Also as Bao

Chicken Tikka Tacos

India🇮🇳

Toasted cheesy naan folded around curried chicken, red cabbage, sweet onion, arugula, and a jalapeno cilantro yogurt sauce. A mashup that works because the naan is made to carry it.

Signature Fusion

Thai Larb

Thailand🇹🇭

Ground pork with lemongrass, mint, red onion, toasted rice, and a chili lime dressing that wakes everything up. Served with coconut sticky rice and cool cucumber.

Bright & Spicy Herbaceous

Falafel Wrap

Levant🇱🇧

Homemade chickpea falafel with roasted red pepper hummus, tzatziki, local greens, cucumber, cherry tomato, pickled red onion and tahini, wrapped in whole wheat lavash. Also on offer as a bowl.

Vegetarian Also as Bowl

Hawaiian Teriyaki Burger

Hawaii🇺🇸

Local New Hampshire beef on a Hawaiian sweet bun with house teriyaki, sweet onion and crisp lettuce. A straight shooter that leans on our farm to get loud.

Local Beef Classic

Beef Quesadilla

Mexico🇲🇽

Shredded beef, fresh pico de gallo, melted cheese, and a cilantro lime crema we'd drink straight if it wouldn't look weird.

Crowd Favorite

Korean Tofu

Korea🇰🇷

Deep fried tofu tossed in the same sweet and spicy gochujang as our Korean chicken, finished with scallion. Vegetarian, and the texture is unreal.

Vegetarian Spicy

Chicken Bao Buns

Asia🇨🇳

Our homemade steamed buns with shredded lemongrass chicken, pickled veg and fresh cilantro. Three in an order, gone in four minutes.

Chapter Two

Sides. Salads. Sips.

The supporting cast that makes every plate feel like an event. Crispy, herby, bright, caffeinated. Pick one, pick four, we won't judge.

Sides

Filipino Lumpia Philippines

Crispy pork rolls with cabbage, carrot, mushroom, garlic, onion and glass noodles. Sweet chili on the side.

Thai Veggie Spring Rolls Thailand

The vegetarian cousin. Carrot, cabbage, onion, garlic and glass noodles in a shatter-crisp wrapper.

Crab Rangoon Nachos Fusion

Fried wonton chips, cream cheese, crab, red pepper, jalapeno, scallion, black sesame. Messy in the best way.

Tokyo Street Fries Japan

Waffle fries, sriracha aioli, wasabi aioli, Japanese BBQ, furikake, black sesame and scallion.

Curry Fries India

Sweet potato fries, curry ketchup, curry aioli, scallion. The warm spice fix.

Spicy Sichuan Wontons China

Local pork wontons bathed in black vinegar and chili oil. Quietly our most ordered side.

Mexican Street Corn Mexico

Grilled corn brushed with chili lime aioli, cotija, cilantro and a fresh squeeze of lime. Summer in a cob.

Salads

Vegan Quinoa Peru

Tri color organic quinoa with red pepper, spinach, kale, onion, carrot, soybean, chickpea, parsley and a fresh lemon vinaigrette. A whole meal.

Greek Salad Greece

Chopped romaine, red pepper, red onion, tomato, cucumber, feta, Kalamata olive, and our house Greek vinaigrette.

Falafel Salad Bowl Levant

Everything in the Falafel Wrap, minus the wrap. Hummus, tzatziki, tahini, all the trimmings, over a bed of greens.

Tell Us

Gluten free, dairy free, vegan, heat tolerance. Ask us on the truck or note it when you book. Most dishes have a workaround.

Sips

Thai Boba Tea Slush Thailand

Fresh brewed Thai tea, condensed milk, brown sugar boba pearls, over shaved ice. Somewhere between a drink and a dessert.

Lavender Lemonade House

Brewed lavender petals and fresh lemon, lightly sweetened, over shaved ice. Tastes like a garden in July.

Cold Brew Coffee Slush Lucas Coffee

Local cold brew, vanilla sweet cream, shaved ice. The late afternoon fuel of champions.

Seasonal Bakes

Pumpkin Cream Cheese Muffins Fall

House baked, swirled with cream cheese, topped with pepitas. Shows up when the leaves turn and disappears fast. Other bakes rotate with the season.

Note

Every sip is built over the same hand shaved ice we use for our Top Treks. The drink list is also the rehearsal dinner for the main event.

. . . A brief detour to higher elevation . . .

Now, the cool side.

Twelve flavors, inspired by the tallest peaks on earth. Syrups made in our kitchen from real fruit, real herbs, local honey and maple. Zero artificial color. Zero artificial flavor. A summit's worth of craft in every cup.

Chapter Five

From our friends.

The menu above wouldn't be half what it is without the farms and small batch producers we source from across the Lakes Region and Seacoast. If you taste it and love it, you can usually thank a neighbor.

Maple Sugar Works

Matras Family Maple

The local maple that makes our Washington shave ice taste like a late winter morning. Clean, deep, and unmistakably New England.

Honey

Carriage Hill Honey

The honey that builds our Avalanche. Raw, local, and the real difference between good and incredible.

Coffee

Lucas Coffee Roasters

The cold brew that anchors our Kilimanjaro and our Cold Brew Slush. Small roaster, serious beans, the good kind of jolt.

Plus the rotating cast of Lakes Region and Seacoast farms whose produce, herbs and dairy show up on the truck through the season. We do our best to list them where we can, and we always thank them at pickup.
